Brain Food: Minted Watermelon, Cucumber & Blueberry Salad

As summer officially draws to a close, it’s time to start thinking about fall. But before the cold temperatures head your way, take advantage of the season’s last watermelons, add them to some delicious blueberries, and make this Minted Watermelon, Cucumber, and Blueberry Salad. Your belly (and your brain) will thank you, too – blueberries are an antioxidant-rich fruit which have been shown to increase cognitive abilities like memory and learning function in adults!

Minted Watermelon, Cucumber, and Blueberry Salad Recipe

Serve with chips like a salsa or over grilled fish, a bed of quinoa, etc.

Yield: About 2 Cups

Ingredients:

  • 1 cup diced watermelon
  • 1/2 cup diced Persian or English hothouse cucumber
  • 1/2 cup fresh blueberries
  • 5 fresh mint leaves, chopped
  • juice of 1 lime
  • chips for serving
