Brain Food: Chocolate Covered Coconut Bars

Dec. 16 is National Chocolate Covered Anything Day and we’ll take any excuse to celebrate the brain-boosting benefits of chocolate!

This delicious recipe from Renewing All Things for Chocolate-Covered Coconut Bars is dairy and gluten free, has no refined sugar and requires no baking!

For the Coconut Bars:
1 cup shredded coconut flakes
1/4 cup raw honey or maple syrup
2 table spoons coconut oil
1/2 tsp pure vanilla
pinch of salt

For The Chocolate Drizzle:
1/4 cup coconut oil
2 table spoons honey
1/4 cup cacao powder
1/4 t. vanilla extract
pinch of salt

Directions:

  1. Blend all of the ingredients listed for the coconut bar, squish it into a small container and freeze for 15 minutes.
  2. Melt coconut oil and honey over low heat then remove from heat and stir in the rest of the drizzle ingredients.
  3. Pour drizzle over coconut bars and return to freezer for 15 minutes.
